Most of us cannot imagine a New Year's table without Olivier salad and caviar sandwiches. Red caviar is an expensive product and should be taken seriously. I do not want to buy a fake at all and spoil my festive mood.

2. Buy caviar only in trusted stores. Needless to say about the absence of any guarantees in a stall at the subway or on the market. Network supermarkets and specialty stores are your friends. This also applies to online shopping. When ordering caviar online, see that the site has enough information about the product (manufacturer, composition, expiration date), and about the seller (full name of the company, telephone, physical address, e-mail).
3. Carefully consider the packaging: there should not be any visible defects. Transparent packaging is safer - through it the spawn can be considered. A tin jar should not be swollen or sag under the pressure of a finger - these are clear signs that the product inside is spoiled. Another way to check is to shake the jar and listen. If you hear a gurgling sound, it means there is a lot of liquid inside, a lot of bursting eggs, which does not indicate the quality of the product. The marking on the cover must be stamped from the inside.

Be sure to specify the type of caviar, more precisely, the type of fish of the salmon family - pink salmon, chum salmon, trout, sockeye, etc. As part of the "right" caviar will be only two ingredients - in fact, caviar and salt. Sometimes the manufacturer adds some vegetable oil. This is done so that the eggs do not stick together. But if you see in the E239 (urotropin), it is better to refrain from buying. Although this preservative is not banned in Ukraine, it is not beneficial to health.

Previously, most of the caviar came to us from Russia, but in recent years the importation of products from the Russian Federation has been banned (Postavlenie CMU No. 1147 of 12/30/2015 "On the prohibition of the importation into the customs territory of Ukraine of goods originating from the Russian Federation"). And although Russian caviar can still be found, especially on the Internet, know that it is a smuggled merchandise. So, it is not possible to control the conditions of its transportation, packaging and storage. In addition, often under the guise of Russian caviar offers counterfeit or imitation. To be sure of quality, buy caviar brought from the United States (State Alaska). It is already packaged here, in Ukraine, and the manufacturer must be indicated on the packaging.
6. Do not be afraid to buy frozen caviar - this is a useful and high-quality product. So, caviar of wild salmon living in the waters of the US state of Alaska, is frozen immediately after catching fish with the addition of a small amount of salt. With proper defrosting, such caviar retains all its beneficial properties. You just need to shift the jar from the freezer to the refrigerator for 10-12 hours and, voila, the freshest caviar is ready for use!
7. It is useful to know your favorite caviar "in the face." The most popular is salmon roe. Pinkish-orange eggs in diameter from 3 to 5 mm. The largest eggs are in chum salmon and chinook (6-7 mm). You can distinguish them by color - orange reddish caviar, and Chinook salmon - rich red. The smallest eggs are found in sockeye and trout (2 to 3 mm in diameter). Note that in the eggs of any kind of fish there is a small dark dot - the germ, which is also called the "eye". In the gelatinous fakes such an "eye" is usually not. In addition, fake eggs made of gelatin are characterized by their perfect shape and uniform color. When biting such eggs will not burst, and flatten and stick to the teeth, and the smell they will have a sharp, "herring". However, this knowledge is unlikely to help you if the product is already purchased and the money is spent. Therefore, vigilance should be exercised at the stage of buying caviar, and not its consumption.
